We are trying to build Power Apps from F&O data source. I know there is an F&O connector from Power Apps, but could we use Dataverse virtual tables (from F&O)?
Yes, you can use Virtual entities to connect the F&O data in Power Apps. This would be my recommendation above the F&O connector. The advantage for using the Dataverse connector is that it runs in the current environment. For the F&O connector, you would need to change the environment per version of the app while moving it from dev, to test, UAT, and production.
When using the F&O connector, updating data can only be done within the default company of the user. This limitation is not there when you use virtual entities.
