Hi All,
Was wondering if there is such a report in Dynamics 365 Finance and Operations, which will display which procurement category was booked against an invoice number? or will that feature have to be customized?

There is no specific report out of the box. You can try to see if you can get the information from the GL transactions. Otherwise, you can consider a customization for a specific report. Can you also tell the exact purpose for this report?
You can possible use electronic reporting for that or alternatively PowerBI.
There is no standard report that includes those details according to my knowledge.

Thank you for your feedback, we need it for Tax reporting, as it is a new requirement issued by UAE Federal Tax Authority, as they want to know the nature of the service, which we match with our procurement category.

Thank you for your feedback, is there any tutorial on how to use the electronic reporting? as our developers informed us it can only be used to create VAT report templates and nothing else.

Electronic Reporting can be use for many other things than VAT reporting only. You can find some examples on my blog.
About your issue:
I would suggest that you are not trying to create something yourself but approach Microsoft and report this issue.
That is because if this is a legal requirement in your home country then MS should provide the necessary reports and functionalities that you need to comply with local legal regulations.
If you need the report very urgent then you can consider creating something yourself.
Otherwise, approaching the MS support is the better option in my opinion.

If this is not containing your report, then I do agree with Ludwig to create a localization request. You can contact Microsoft for this.
