Are there any ERDs out there which illustrate the core functions of NAV 2013 R2? I'm attempting to determine the integration points for customized external software with NAV, and would love to add the external entities on top of a pre existing "generic NAV" ERD.

You should contact NaviTools (http://www.navitools.com/) or use MergeTool (www.mergetool.com/default.html), tool that provide analyze code and relations beetwen tables (and also top upgrade features).
