My employee entered a payment in receivables management but input the incorrect dates. Is there a way to unpost and correct the dates after it has been master posted?

You can't unpost the posted transactions. But GP providing the void functionality (instead of unpost) for posted transactions. Follow the below steps to void the posted payment and create new payment with correct date.
1. Go to: Receivables Posted Transactions Maintenance window (Transaction-->Sales-->Posted Transactions).
2. In that window, choose customer id and select payment in Document type field then choose you posted payment in the number field.
3. Now click void button to void your posted payment.
4. After voided this payment you can create new payment with correct date.

It was a 30 page batch of transactions and payments on various accounts, We are a healthcare entity and we set up patient level accounts. I just don't want my employee having to go through that much manual entry again. DARN!
I think no other option available. You need to void and create new transactions.
Soma is correct - voiding and reposting is your only viable option.
I think it depends on which dates are incorrect. if the general ledger dates are incorrect then someone has to post the transaction to the correct period so the data entry has to occur.
if the document date is wrong but the gl date is right you could turn off posting to the gl and void in a/r and rekey to a dummy account thus not changing the gl - making notes as you go along on the document to explain why there is a dummy account there.
and remembering to turn posting to the gl back on of course!
if the discount date or due date is wrong you can edit those in the edit receivables transaction window.
