I'd like to be able to create an Advance Find query that goes something like this
(members in Marketing List 1 or members in Marketing List 2)
and
not members from Marketing List 3
ie. if Joe Blow is in List1 and List3, he won't be included in the results
Is this possible?

It's possible to create that FetchXml Query but you will have to use XrmToolbox for that purpose. It's not possible to create that query using Advanced Find because it's not possible to add Contact-Marketing List relationship twice that is required in order to implement your requirement.
