We would like to create a view of all our open opportunities where estimated close date are moved during the last month. Is it possible?

A quick and simple way of potentially doing it is creating another date time field on opportunities called Est Close Move Date.
Then create a flow that triggers on Est Close date modification and update that date time field to the modification date. You can then use that date time field as your view filter.
