In my Contact form, the address composite field was not shown as multiple line text, it was displayed as Adresss 1: street 1, Address 1 : street 2, do I miss any configuration setting? I believe this filed should be shown as multiple texts filed and if I want to edit it, the flyout menu should be displayed. Thanks for your help.

This is by design. Address composite field is no longer available in UCI, it is split into individual fields, as you can see, Addresss 1: street 1, Address 1 : street 2.
For now, the only solution to implement flyout menu is through PCF controls, as Andrew suggested.

Composite Address control is one of the controls that did not make it to UCI during the transition from Classic UI.
You can check PCF control I created for that purpose. It's available as a part of my toolkit - github.com/.../1.0.0.3
