After installing Customer Voice at the tenant level, signing on to Customer Voice via the Web and connecting it to a D365 environment (via the initial set-up wizard) I would like to 'point' Customer Voice to a different D365 instance within the same tenant. Is this possible? Or should I not need to do this? Essentially, I'd like to send and receive surveys from a different instance of D365 now that the original D365 instance that I chose during initial set up.

When you sign up for Customer Voice service, it is enabled at tenant level. Each project in Customer Voice is tied to a D365 Environment. These can be different for different projects.
You can start with creating a new project and in location choose the Environment you want to connect the project with. You can find the steps here: Create a project | Microsoft Docs
You also need to ensure that Customer Voice application is installed in that environment and you have Project Owner role in that environment. Steps for the same are available here: Connect Dynamics 365 Customer Voice with your environment | Microsoft Docs
