I am trying to alter which email address is pulled from Customer Maintenance when emailing invoices directly from Collections Management.

Is there a way to do that automatically, instead of using that drop down option?

You want to automatically add to,cc and Bcc email address on the basis of customer+Address , this can only be done by customization.
