Unable to select the field Email from Customer Insights - Data Customer Profile in Marketing

I have a question about Customer Insights (both Data and Journeys). The screenshots and text below explains the issue I’m facing.

I am trying to create a Segment within Customer Insights - Data, which I did. Now, the Segment is synchronized/available in Dynamics 365 Customer Insights - Journeys (a.k.a. Marketing). The last step is to create a Journey based on this Segment (in this case, so we can reach out to customers whose agreement is about to expire). 

In Customer Insights – Journeys, the Customer Profile email contact point should be mapped to the email address from the Customer Profile (within the Audience Configuration settings), so that it knows which email address (field) to use when sending out emails. However, I cannot for the life of me figure out why I'm not seeing the email address field from the customer profile (see the screenshot below).


The result is that a Journey doesn't know which email address it should use (to send the email to)...
 
The question is: what should I change or do to be able to select the email address field from the Customer Profile in Customer Insights - Journeys? It looks like the list (in the above screenshot) is based on Account based customer profiles (regardless if the segment is contact or account based)... But the customer fields for the contact (within Customer Insights – Data) are set up as seen below (it includes the email address field):

Unfortunately I cannot find anything about this in the Microsoft Learn pages/other webpages… And I don't have enough Customer Insights - Data experience to figure it out.
