Please pay attention that you can record permissions by starting a recording wizard and doing the things that you would allow to the user. Then you can save it as a separate permission set and users then will be able to access only those objects.
You need to create new permission sets and then add related objects to that. If you need further control you can create profiles and then hide unwanted action buttons on the ribbon as well.
