Signed up for the Talent Trial.
Got an e-mail that said:

Microsoft Imagine Academy is here to get you up to speed fast. Simply sign up and search for the Microsoft Dynamics 365 for Talent introductory course. You'll learn the basics of this all-in-one solution, while exploring the features and benefits for talent managers and HR professionals."

When I clicked on the Microsoft Imagine Academy link, I got a message that said the site has been retired.

What's the best (online) way to see a demo of this product?

Are you employed by a Microsoft partner with access to DLP? Then this site is the best : mbspartner.microsoft.com

If you don't you can watch videos on YouTube : www.youtube.com/playlist

In my blog you can also se a lot of the functionality in the system: malinsdynamics365fortalent.com
