can someone explain the difference between the survey types: response routing and client-side routing?

Hi Marvin, from the reference URL - looks like you are looking at documentation from Voice of the Customer, rather than D365 Customer Voice. Voice of the Customer no longer exists. Check out this instead:

Marvin Reinknecht - Customer Voice provides workflow integration through Power Automate and should cover scenarios from VOC. You can check out customer voice at https://aka.ms/CustomerVoice
