Capturar la fecha y hora, cuando se seleccione un estado

Hola

Actualmente en las Ordenes de trabajo tengo un subestado llamado documentado entre otros, Quisiera poder capturar la hora y la fecha en que se pone ese estado en la Orden de trabajo y tenerla un nuevo campo o columna
