I have the following feature management image to enable in Dynamics 365 Finance and Operations but I would like to know, what do the symbols that appear next to the enable date mean, do they still serve to enable or will these features be removed in the next version?

Some of the symbols indicate warning that are mentioned in the description box on the right-hand side.
Before activating them you should be aware of those warnings and make sure that you activate or do not activate something that you don't want to have.
There are other features that have dependencies among each others, where you also see a warning and finally there are some features that you cannot enable yourself because they are preview features or they require some coordination and interaction with MS before you can enable them.
The best thing is to activate them in a demo environment first and test things out carefully before doing this in your live environment.
