Use Case: Custom journey to ask leads/contacts for opt-in after cold-call

Our sales teams are cold-calling potential customers (leads). During the call, they request permission to send marketing materials (opt-in). However, for GDPR and legal reasons, we also need a formally documented opt-in. Furthermore, the data privacy requirement is to get separate opt-ins for each of our product groups, therefore it is not sufficient to use the out-of-the-box GDPR boolean fields (e.g. "DoNotBulkEmail"). We aim for separate subscription list memberships documenting given opt-ins.

My proposed solution
I want to design a customer journey enabling sales users to manually trigger a formal opt-in request email out of the contact (or lead) entity.
  1. Sales user adds a contact/lead to a segment/marketing list/subscription list (dynamic/static)
    • e.g. "Add to segment" where segment name is "Opt-in request - maintenance services" or "opt-in request - consulting services"
  2. This event acts as a trigger for sending an email with a hyperlink to the contact/lead.
  3. The contact clicks the link and a "Thank You!" message appears.
  4. Because the contact clicked the link, he/she gets added to a sales department specific marketing/subscription list for opted-in contacts/leads. (e.g. "List for opted-in prospects for maintenance services")
    • Best would be if no form with submit-button was required. I want to use the "Clicked a Link" event in the journey, to save the customers time.
  5. Contact gets another email with a link to a form where she/he can opt-out if opted-in by mistake.
My questions
  1.  Is my use case viable using Dynamics Customer Insights - Journeys or the old Dynamics Marketing Module? If not, what could be a viable workaround?
  2.  Should I use the lead or the contact entity?
  3.  Do I need to use a segment or a marketing list along with a segment that uses the marketing list as filter for the journey trigger? Do I need to use a subscription list? Should I use the static or dynamic version?
  4.  How do I configure it to ask for opt-in only once when the contact/lead is added to a "opt-in request" segment/marketing list for the first time?
