Show inventory quantity based on booked equipment

Hey community,

i am trying to show the quantity of a product based on a date. Since there are standard stock/inventory column, i thought there might be a ootb solution.

Let me try to explain:

we have a model driven app with events and products. the products can be booked for a specific time area. after this time, the products go back to the inventory.

For example we have 1.000 chairs. Person 1 books 500 chairs from March 1 to March 5. Person B wants to check the stock of this specific product/chair on March 3. How can i see/show the stock for this date?

Basically there should be a date column at the product entity/at the product where you can set a date and next to it there is a column that shows the stock for this date.
