Hello,
I'm trying to make a custom Dynamic 365 quote template and the tutorials I've seen refer me to the Developer tab and then the XML Mapping Pane in Word. The version of Word that i'm does not include the XML Mapping option under the Developer tab. Is there a way to enable it? If not how can I customize the template?

The built-in XML Mapping Task Pane supports only MS 2013 and higher.
What version of word you have?
Or you can try to install XML Mapping Task Pane if the version is lower, which is done via a third party add-on (the CodePlex).
The XML Mapping Task Pane for Word can be used to build templates that utilize content controls and XML mapping in Word 2007/2010.
