Is their is any available document like this? if yes, are customer allowed to have a copy of this document or only partners are allowed. Where can I get this document?

I don't think there is any document like this. Since NAV has a 1000+ tables this would be a huge job to create.

I have been in the NAV business for 15 years and never have seen such a document. Eventhough several people have asked it.

So you have to create it yourself of maybe someone has already done this, which he/she want to share.
