Finally I found out that the version of Invoice capture I was using wasn't up-to-date. Once update applied, the interface labels and languages apply correctly.

As suggested by Jonas I'll try uninstallng and doing a fresh install as Power Apps seems lost with languages.
At first only French was installed and it worked fine for some months. Suddenly problems appeared (maybe folowing updates in our D365 FO versions). Following these problems I tried activating English in PowerApps and do get the choice now in Invoice capture to switch languages but still the problem remains. Power apps seems lost with some label libraries.
I'll post information after reinstall to inform if it solves the problem or not.
We aren't in production yet so no difficulty in redoing thefull process.
I just reread what you wrote about you trying in English... Just wanted to make sure you changed it in Power Platform also.
If changing the language in Power Platform still doesn't work, then it's worth trying to uninstall Invoice Capture and installing the latest version from App Source.
Languages work a bit differently in the Invoice Capture app compared to F&O forms, since it’s built using Power Platform. Based on the fact that "Refresh" appears as "Actualiser," it seems like the app might be in French. I’ve noticed that Power Platform environments deployed through LCS sometimes set their base language according to the user who deployed the F&O environment.
To change the language in Invoice Capture, and other Power Platform apps, click on the gear icon in the upper-right corner and select "Personalization Settings".
Click on Languages, select a different UI language and then click OK
If you are missing English as language, you will have to install it. But it will require some down time.
Let me know if you can find English, and also what the value of "Base language" is.
Check if the label files for the Invoice Capture forms are correctly deployed. Missing or corrupted label files can cause this issue.
You might need to redeploy the label files or update them if there are any recent changes or updates.
In addition, clearing your browser cache can resolve display issues. Try clearing the cache and then reload the page.
