If you go to the app selection menu, you'll see all your apps have three buttons on the top right corner:
If you click there, you have the option to go to the App Designer. This will allow you to change the name, as well as the logo that shows on the app selection.
If you want to change the colouring and the image that shows on top left in all Dynamics, then you should verify themes.
