I have a customer who is looking to give their field service staff out on vans, a mobile device with a screen big enough that the customer can see details of the work carried out, then write their signature. They would also like to make calls on it (so needs a 3g signal etc) Anyone got any recommendations for the best device to support this, ie would a standard tablet normally be used - I just wouldn't see this being used for calls also and dock neatly in a van?

It all depends on Client's budget:

The best one's obviously perform good like iPad or Surface

There are Samsung tabs in the market with high configuration (Personal recommendation)

But any device with capabilities listed in below URL will perform good

I would suggest a smart phone if you need to make calls on it. We have implemented mobile apps for Field Service on windows and android phones. Think practicality, keep it simple. A smart phone is the most practical solution in my experience.
