When using the search functionality across all entities it is not picking up Serial Number(Asset) entity - any suggestions please
You added the column to the Quick Find View, but you need the column to the 'Find by' columns at the bottom of the view.

I did actually find a solution - opening the default solution - click on ‘enties’ on the left hand side and you’ll notice ‘configure relevance search’ on the mini ribbon. This is were you can add and remove entities from the search.
