DJM$ Email template insert dynamic text that has embedded less than (<) and greater than (>) symbols

We are using email templates to send emails when an Incident is resolved.

The resolution field from the Incident form is inserted dynamically and contains < and > symbols with text in between.  example:  "F565 <app 1-a>" 

When the email is generated and sent, the text between the < and > symbols does not appear in the email.

I can kind of understand how/why this might happen.  Has anyone seen this behavior?
