I have leads and contacts visiting our website, filling out 365 Marketing forms and being sent emails from 365 Marketing. How do I allow my sales team to see that activity on the lead/contact record?

Yes, you should instruct them work in Sales Hub(UCI) instead of Sales.(Legacy web client)
Because many components in UCI, includes widget for insights data are built with modern technology.(and marketing email designer, marketing form designer etc.)
In the end of this year, everything will be transited to UCI.

That view is from 365 Marketing, not 365 Sales. The sales people are not working in the marketing system.

Thank you for reaching out.
Answering to your question, please select [Email a link] at the top navigation for a given contact/lead (as shown in the screenshot below).
It will generate a link to a contact/lead form and if your sales team colleagues have access to "customer insights" (to msdyncrm_customerinsightsinfo entity) - they should be able to access insights of a given contact/lead.

Unlike Dynamics entity records, these activities are saved in Insights data service,
if you want to see marketing form submission activities and visit activities, you can find them in Marketing form > Insights:

if you want to see marketing email delivery activities, you can find it in Customer Journey(which you use it to send marketing email) > a marketing email tile > view details
then you can see all marketing email activities during a specific customer journey.
Obviously, you can also view from the perspective of contact or lead.
You can find all entities which are supported to marketing activities here.
So please assign necessary privileges on those entities: marketing email, marketing form, customer journey, contact and lead for your sales team.
To analyse these activities, you can connect marketing application to Power BI or export them as csv file with new feature in 2020 wave 1 release.
