I think booking journal time entries are only created when the booking is set to complete.
However, I would like to create time stamps after each booking status change. (e.g. from On break to In progress)
Is this achievable?

Hi Theresa.
The Booking Journal is created on the completion of the booking because it summarize the time that the resource was in each status. E.g. The resource can go on the break and come back to in progress multiple times.
Each time you change the Booking Status a new record is created on Booking Timestamps. Those are the same records that will calculate the Booking Journal.

I just have the problem that tech sometimes forget to change their status. So I wanted to see if its possible to adjust the journal while the booking is still open, so they can adjust it straight away.

The technicians can adjust the time entry later. It is up to your business to decide when they have to submit it.
I like to use the actuals generated from the time entry to calculate the labour on the job. You also can allow people from the office without booking to log time on it.
The benefit for the technicians is the accurate time entries generated by the system when they keep the booking status updated. To help with it, you can work with geofence to send notifications to the phone, so they will be reminded when arriving or leaving the site.
