if there an oppurtinity to check the load of the data center / the server over which dynamics marketing runs? I would also like to see how high the load is.
I would also like to see how high the load is currently when sending marketing emails and customer journeys to check exceptionally long delays.. Is there a way to check for these 2 situations?
In the past I had 2 situations where I could not check why a customer journey had a delay of almost 3 hours. also I noticed different performance with the email marketing editor.

Unfortunately, it's not possible to know which server is providing service. Dynamics 365 is conceived as "Software as a service" that relies over several different technologies: AzureAD, AzureSQL, AzureDataLake, etc. Service is not being provided by a single service unit but under several services communicating each other. If there's an issue with your Datacenter or Region, you should be able to see this information in your Microsoft365 Admin Center, on the Service Health report:
