Hi.
All related documentation is stating that there should be an Sender Type (Send As) functionality in SMTP connector email set-up. But in our on premise instance it is nowhere to be found.
Version: W1 20.2 (Platform 20.0.41086.41354 + Application 20.2.41144.41423)

To be honest I find myself very often in a situation where MS documentation is not up to date, does not contain needed information or like in this case talks about features that are simply not available in the software.

Documentation states that GA / general availability is August. August CU is 20.4. Your environment is running 20.2 hence the functionality is not to be found in this release. Also note that some functionality may not work due to the release of Exchange you are running.
