Does anyone have and example of a MSSQL server definition for an analytic services data cube?

The demo database is on the product CD. There should also be an installation manual for Business Analytics, the proprietary cube generator. This is set up in the demo database. You'll have to install the components, and generate the cube from there. I don't know if it's worth your while though, it's pretty funky and probably a bit counter intuitive if you're used to the SQL Server BI tools.
To get to the table relations you'll have to look at the table design in the NAV object designer. Have the user show you what they want to see inside the NAV client, and figure out from there what the table structure is.

I would like to get my hands on the demo database cube (we have NAV 4.0) , I am assuming that it is an actuall ssas cube definition/project right. My problem is I can build cubes in BIDS but I am guessing at the table relations
the CUBEs I have constructed centre around the GL tables for our finance people
Are you talking about NAV Business Analytics or just a regular SSAS cube?
The NAV demo database has a demo cube in it, and all you need to do is make sure you install everything properly and it should work out. I've never done the whole senario myself, but I've seen it done fairly quickly. The installation manual shows you how to get everything set up.
If you are talking about a regular SQL Server cube then take a look at the tutorials in Books Online. You can find books online (if it is installed) under Start, All programs, SQL Server, Documentation and Tutorials. I see there is even a menu selection for tutorials, see if you can find something in there. I ran all the BI tutorials last year and could follow along with all of it. I also had a book to read, called "The Microsoft Datawarehouse Toolkit".
