I have an incredibly long Option Set Value List (100+... don't ask).
I would like to have the blank, "Unassigned Value" in the middle of the list, so Users can scroll up or down from the middle (if they want to make a selection), instead of having to scroll from top all the way down to the bottom. I tried creating a Blank label for an option set value, but Dynamics won't allow for a blank value.
Is there any way to do this? Either out-of-the-box, or with javascript?

You can try to place an invisible space (copy from this link: https://emptycharacter.com/) into a blank optionset label. Below is the screenshot of what I tried and how it looks.
Also, I suggest you to have a label with text '----Blank----' or '--------------------' instead of blank space.
Problem is, even with a customization, if you need to change the option set in any way, you would have to recode the customization. If MS rolls out anything new that affects the customization any way, you would have to recode the customization. Basically, anything changes and you would have to recode the customization.
I have never tried it. But I think the only way is to customize it.
