how do I get my CRT class to run in offline store commerce mode?.

    Start with Create deployable packages - Commerce | Dynamics 365 | Microsoft Learn

    There's a section for updating the CommerceRuntime.MPOSOffline.Ext.config file, and packaging your DLLs.
