Does anyone know where and how D365 CE processes the data generated in chat? So are they only processed in the EU tenant even if they come from Asia or does this go worldwide?
Is it possible to read this somewhere?

There aren't doc mentions about where the data is generated. The only thing to know is that you can view the chat history in the Conversation entity:
