After my testing, I could achieve this feature. You can refer to the steps I provided to test again:
1. Create a "Global" email template.
2. Create an email in a custom entity and insert this template

Many thanks for your reply, tried both approaches I am more interested to have the second approach working to be honest, could open much more flexibility and choices when using Dynamic Content for displaying data on Emails
Once the email template has been edited and saved the Dynamic Content sintax "EntityLogicalName:FieldLogicalName" is accepted and updated but I cannot get the Dynamic Content to be displayed once the email template has been saved and launched, basically shows blank
Any thoughts?

Unfortunately, you can't select a custom entity on “Record Type”, because the Record Type of the template is related to the “Category” which is selected when the template is created.
However, you can try the following two methods to select dynamic contents in custom entities.
The first method is listed below
1. Create a custom entity "Class" and then define a one-to-many relationship with "Contact".
2. Find “Class” in “Field Name”.
3. Test the template.
