Q1. Different between Released Product and Product Master
Answer : Product in itself is unique item, where as product master is an item maintained as per the variants combination that you may have.
For e.g. For Mens Full Sleeve Shirt - 32 Size available in Black and Red color, You might create 4 Items as Released Product with unique Item Number identifying the Size and color combination or You can create 1 Product Master for Mens Full Sleeve Shirt having 2 product Dimension combination i.e. Size and color.
Q2. What are the default variants in the system ?
Answer : There are none, you will have to create variants as per the dimension combination you assign the product master. For more insight on Product variants and Product Dimension refer docs.microsoft.com/.../about-product-variants
Q3. What is the difference between doing inventory from movement instead of SO and PO ?
Answer : They are 2 different things. Inventory Movement is used for adjustment purposes, where as SO (Sales Order) is to book customer order and further process of pick > pack > Invoice to full fill the order. Similarly PO (Purchase Order) is for Vendor Ordering and further process follow is Receipt Registration > Product Receipt > Vendor Invoice.

Below some definitions:
Product master – A product definition that forms the basis of product variants.
A released product is one that can be used for transactions in your environment.
An inventory movement journal moves inventory items from one location to another one (e.g. from warehouse 1 to warehouse 2).
SO and POs also create inventory transactions but move the items in or out of the company.
