Is it possible to amend the below options for the activities that we do not use within the business please:
I have provided an image of the FAX entity to which we don't intend to use as an activity.

that settings are not possible to change, however with the 2022 Release Wave 1 (public preview February / GA April) the dropdown will show only the activities included inside the current app

It is not possible to modify the selected settings.
You can created custom entity for your requirement instead of using OOB entity.
