Hello,
is there any easy way to reset the security roles to how they are fresh out of the box? I was thinking I could reset the sandbox, but I don't think there is a "security role" solution I could export from the sandbox and import into production. Or could I create a custom solution? Any thoughts would be appreciated.
Also, what is the best security role to have read/write access to all basic and custom entities but not any more privledges than that really?
Will any custom security roles remain in the target environment, and then all the original security roles will be added upon import? If a default security role was changed, will importing it to the target environment overwrite the existing, changed role?

To reset the security roles, you need to prepare a fresh new environment, then create a custom solution, add all security roles to it. Then export it out and import it to the target environment.
For your second question, I don' think there is a OOB security role that can meet your requirements. System admin has read/write access to all basic and custom entities but also has other privileges. You can define a custom role to meet your requirements.
