Hi everyone, i have some item that i want to change the quantity but i cant .

What do you mean you can't? The field in the item card you indicated is an auto-calculated field based on the postings of inventory movement. You are not able just modify it in the item card. You need to make posting of corresponding document with that item so that it would affect the change in quantity. E.g., you need to post a warehouse shipment to increase this quantity, and sales order to decrease it.
You can drill down to this number and see the posted documents behind it, showing how you arrived to that quantity.
i want to specify the quantity of each item that i have to sell but i can't find how can i change it exactly .
Where do you want to specify it? If you have e.g. 10 units of inventory (visible in the field you marked in your item card), you can create a Sales Order, select this item in the Sales Order Line and put e.g. 7 units to be sold. This itself will not yet change the inventory (as the items are still yours), but Quantity on Sales Order filed will be increased on the same item card.
When you post this Sales Order, this will change your inventory: the physical inventory will be decreased now and only 3 units will be now available in the Inventory field on the item card.
So, to decrease the quantity of the physical inventory you need to post related documents - e.g., Sales Order.
You need to post Purchase Order or Item Journal to increase the Quantity (Inventory) for the related items.
You can not directly change the quantity at Item Card level.
If you want to change quantity of an item, you need create a Sale Order or a Purchase Order and Post it, you can't directly change by hand.
In this case, I think you want to increase the quantity of items so you should create new Purchase Order.
If you want to know the exact quantity of each item you have in inventory, you can add field "Inventory" in "Items" page to show quantity of each item, or you can view it in "Item Card".

Can you Just Click on the Negative 1 Qty and it will open Item Ledger Entry Can you Upload That Screen as well for us to have better understand.
Item Card Inventory field is Flow Field and it is Calculated on your Item Ledger Entry Transactions.
In Order to Change That field your Need to Post Transaction Like Item Journal Positive Adjustment Or if you have Purchase Order and GRN to be Made post those Good Received Transactions.
for example i want to add a new item and i will define that i have only 5 in my inventory wher can i add this information
in the Item Card Inventory Fields you cannot Modify because it is flow field from item ledger entry, if you need define qty 5 on that field either you need make new purchase or you can go to Item Journal and Make Positive Adjustment.
You can enter 5 quantity at Max. Quantity field and system would not suggest more than defined quantity when you run planning engine.
However system would not restrict when you create manual purchase order. For this you need to go for customizations.

Normally you will purchase items and post warehouse shipments to increase the quantity in stock.
If you have a task of e.g. transfer opening balances for a company that goes to new (NAV) system, and you would like just to generate on a balance some quantity of item, you need to use item journals for that, and post needed quantity of item in correspondence with needed technical account for transferring opening balances. Similar actions you would need when you do stock-taking and you realize you have differences in real stock and in the system - you would need to correct the quantity up or down to match the stocktaking using e.g. Physical Inventory journals: msdn.microsoft.com/.../hh168115(v=nav.90).aspx
