I have a customer journey running and now i want to change one of the emails in there. I have tested it by stopping the live journey, then change the email and then set it live again and it seemed to work. But i have also read that it's not possible.

It's up to whether the contacts(audience) have been processed or not.
You can change the email in the live customer journey.
But it will only work for the contacts who haven't been sent to the email, which means the sent emails will not be changed and will not be resent.
