Project Management for a web design agency

Hoping someone can give me some advice.
 
We are currently using Dynamics 365 Customer Engagement as our CRM, looking after our accounts and contacts.
 
As a web design agency our business workflow runs something like this :
 
1) Sales guys sell a new website to a client
2) This then becomes a Project, which is assigned to a Project Manager
3) Project involves Design, Build, Client signoff, Go Live
4) Once the site is live we provide hosting, Service and edits (either ad-hoc or via a maintenance agreement)
 
What I am aiming to do is have this whole process within Dynamics, as at the moment the PM's are using various tools, emails are flying around and the developer schedule is just an XLS.
 
A few things I need to understand. It is my thinking that before a website is sold , it is a product that is available to buy (problem here as all pricing is on a client by client basis). Once the product is sold I can then create the project. Once the project is completed the product becomes an asset assigned to the account. Once the asset is assigned I can use entitlements to manage maintenance agreement (hours used per month etc)
 
I have already built the main crm for managing the accounts and clients but :
a) Is Dynamics Project Management the way to go for the design, build and completion of the project? I can see most stages are based on a manufacturing type process- Is it best for me to use this but create the workflow from scratch? The PM's will need to assign tasks to developers, once a task is complete they can move to the next stage of the build etc etc.
 
b) is the way I am planning to use the Product entity for a website before it is sold the best way to go or is there a better way that is more closely aligned with a web design agency? If I do go down the product route, how do I get around the fact there is no base price?
 
I know there are a lot of questions here and I realise that I can't ask for the whole system to be designed but I just want to make sure I am approaching this the right way, so any help will be more than gratefully received
