In the credit Collection module - Collection letter sequence - Can each individual collection be assign to their accounts? For example I have a collection of pools of all my accounts can I do this.?

Are you referring to define Collection sequence to individual customer or customer group?? If yes then yes it can be done at customer master .

On the form you shared, there is no out of the box filtering option. You can use the credit management overview which do have the option to view the customers and open balances per collection pool. For this form you have to consider a customization.

The form I was referring to is: Credit and collections > Collections > Aged balances.
There was an ISV solution with advanced credit management functionality. Microsoft acquired this solution and will add the features to the product starting in October 2020. docs.microsoft.com/.../planned-features
I'm not aware of other solutions.
