Seemingly there is no existing official document talking about GitLab for D365FO implementation. You can also check more details from below release plan through Sept.2020.

The new feature for hosted builds explains the steps needed to build. Although we don't have explicit scripts or tasks for GitLab, you should be able to follow the steps and create your own GitLab pipeline.
