How is data stored into the AuditTableLog table?

I have tried checking the methods within the AuditTableLog table but as per checking the debugger does not pass through any method in there. I am trying to identify why Non-english characters are stored in the NewValue and OldValue fields as question marks(???), but as per checking I am unable to find the method which inserts the data into the table.
