Cannot create N:1 relationship Dynamics 365 - 500 error

Trying to set up an N:1 Relationship between the Opportunity and Opportunity Product Entity. Every time I try though, I get a generic error. When I open up Dev Tools in Chrome, its showing a 500 error, which isn't overly helpful. I have the System Admin security role in CRM, and the error isn't alluding to it being a permissions issue. 
 
The reason I am doing this in the first place, is our Sales Reps would like to have a report on how often an ISBN is associated with an Opportunity. My first thought here would be to use a Rollup field to count it. But the Rollup field won't let me narrow my criteria to only OPEN Opportunities. It's counting them all because the Rollup field is associated with the Opportunity Product entity, not the Opportunity entity. Now I could narrow it down if there was a field in Opportunity Product that was being updated in tandem to the Status of the Opportunity entity. So I created an Option Set in Opportunity Product, and now need to establish the relationship between the two entities so I can create a workflow, where anytime the status of the Opportunity changes, it edits the new field in Opportunity Product Accordingly. But I'm getting hung up on this 500 error when trying to establish the relationship.
 
Does anyone have any advice on what I may be doing wrong, or what I can do differently to solve my problem?
