The only instructions I'm finding for this is with the old version of Dynamics. I'm trying to do this on 365 and I can't figure it out. The older instructions don't line up with the available options in 365.
To be clear, I have existing customers. I need to change some of them from Person to Organization.

Andre has already addressed a solution. In a case that you have one part with "Person" type, you need to create a new part first with "Organization" type in Global address book, then you can change the party id for the customer and vendor from the Person PartyID to the Organization PartyID via "Change party association" function.

This is still working the same in Dynamics 365. The menu item for changing the party association is now on another place, see picture below.
