Go to Bookable Resource entity in one of your solutions - or within Customizations (Settings --> Customization --> Customizations OR go to Solutions if you have one)
Click on the Bookable Resource entity...Find the Outlook and Mobile section and UNCHECK the Read-only in Mobile setting. Save and Publish the entity. Go back to Bookable Resources and BAM...it now is editable. I've notified Product Management and Support. They are looking into it!
