Hi,
The default Project Manager rol allows to see and edit a lot of information about projects he/she doesn't not manage.
Which are the possible ways to limit this?

Have you tried/thought about using XDS that limits the access of the role to certain records?
Also check whether removing the access to the 'all projects' list page already resolves the issue. That is, please check if it is sufficient if Project Managers only have access to the 'my projects' list page.

You can create new display menuitem to the same ListPage - but with additional query that filters the records. Don't you have an access to 'My projects' menu element?

I've done exactly this by using an XDS policy on the project group - managers have access to projects related to the groups they manage.
It could be setup many ways and is fairly straightforward.
The setup we have built is WHERE ProjGroup = XXX attached to a ProjectManagerXXX security role. It works well for us but could be done a number of different ways depending on how you want to restrict it. You could also do a query on user = currentuser().
