For any reason I don't see all opportunities in the module forecasts (underlying records )of sales hub, i only see the opportunities won or lost, I don't know if this option works like this or if I'm missing some permission or role.

Sales Hub > Performance > Forecast - (see alls opportunities)

We need more details, whether you are using Forecast by Region or User Hierarchy or custom Forecast model.

When you click on the Aggregates, CRM drill down the details (user hierarchy Forecast). Also a Kanban can be shown below to see list of all opportunities having different tiles. Opportunity field Forecast Category will decide which opportunity should fall in which tile. You can also drag opportunities in respective tile except Won & Lost.

May be you have only user level access. You can give yourself Admin role to check if there is any access level issues.

Use correct drill down as well in forecast configurations.

The Forecast module requires the Opportunity field [Forecast Category] to be populated. This can happen automatically when an Opportunity is won or lost, or can be set manually while it is still open. Do your Opportunity records have a value in this field?

Secondly, check the configuration of the forecasts. It is possible a filter or setting was applied so only closed records are appearing (Configure forecasts in your organization | Microsoft Learn)
