Why use Organizational Hierarchies for Security? How does it flow through the Org. Hierarchy?

I am trying to find a reason on why we should use Organizational Hierarchy when it comes to Security. How is it helpful? Given that now we can assign different roles to users in different companies through the 'Assign Organization' feature, the org hierarchy seems redundant for Security.

For example:

TestUser can be assigned an Accountant role in Company ABC. But we can also add another role (say Buyer) in DEF company.

This shows that company ABC and DEF don't really have to be 'under an umbrella' since Security allows individual company assignment.

Is there anything that I am missing or not seeing clearly from this concept?

Any help or insight will be much appreciated.

Thanks.

If you are managing security across a large number of organisations you can save some time by having pre-configured groups of organisations e.g. Security - Contoso Europe and Security - Contoso USA.  It will be quicker to assign permissions to all the organisations in a hierarchy by selecting the Security hierarchy and then selecting the "Grant with children" button, as opposed to selecting one by one.  It may also reduce the chance of making a mistake when assigning a user to multiple organisations one by one.

Is it just a alternative to give access to different clients to a user or we can use it further?

My Org hierarchy with purpose Security has a structure detailing LE-BU-DEPT-CC, so can the data be filtered (like record level security) using it?

I tried it but I found was the user gets access to only the legal entities mentioned in the Org hierarchy but the other levels of the same hierarchy are not then only ones he can access, I mean all BU's, Dep's CC's are visible to him whereas I expected to see only the BU, Dep, CC which is there in the Org Hierarchy.
