In the new sales hub, I don't see a way to add columns or fields to the Dynamic Marketing List members view. When I click the Manage Members button, there's no Add fields option. Where would this be in the new UI?

Member view uses the views of each entity defined in Marketing List type.
So it will depend on the selected type.
If you check the Marketing List form editor, there will be 3 sections by default: Contact, Account and Lead. And then you can check which entity views are configured.
For example:
If your Marketing List has type = Contact, then you can edit the 'All Contacts' view, which is the default one.
And so on, by default Account section uses 'All Contacts' and Leads uses 'All Leads' view.
