I am having an issue where notes under Customer Maintenance are haphazardly disappearing. Staff is not likely deleting these notes on purpose. Is there an easy way to accidentally delete the notes contents without knowing, or is this perhaps a common GP issue?

Notes can be very tricky. Sometimes it is a training issue (user attaches a note to the window, instead of the list entry or they don't realize deleting a new entry deletes the entire note) and other times it is a problem with cross note indexes. When a note "disappears" and a client knows something unique in the text of the note, I'll search via SQL for the note that has has that text and then track back if the note is attached to multiple records in GP. (If you find a problem with cross-linked notes, Support can provide a tool to locate the crossed notes and help with resetting the note index.)
But the main issue I see with notes is during the restore of data to a test company: The Next Note Index is stored in the DYNAMICS database so you need to make certain to update that as part of your test company restore process.

This would not be a common issue in GP. The only notes issue I could find was regarding OLE notes during an upgrade.
I could not find an easy way to delete the notes without know it.
My suggestion would be to open a support incident. They can create a shadow table that will record when the note was removed.
